What is Arborio Rice and Risotto?
Arborio rice is an Italian short-grain rice. It is named after the town of Arborio in Italy. When cooked, the rounded grains are firm, and creamy and chewy compared to other varieties of rice, due to their higher amylopectin starch content. It has a starchy taste and blends well with other flavours. The most widely available risotto rice, arborio is typically wider and longer than carnaroli or vialone nano.
Risotto—a dish that originated in northern Italy—takes Arborio rice and combines it with butter and onion, water or stock, white wine, and cheese for a creamy main dish balanced by a "toothy" crunch (aka, al dente).
