Soak overnight. Discard water and simmer in fresh water for 1½-2 hours until tender.
Chickpeas have a nutty taste and a firm and buttery texture which makes them ideal for stews, curries, pasta, salads and for sprouting. Sprouts are delicious added to sandwiches, salads and stir-fries. Chickpeas are also used to make hummus, ground into flour to make falafel. Even dairy-free fudge is made with this versatile legume.
